A chilled food display counter The Level 3 qualifications / Intermediate Certificate have been developed for managers and supervisors in small, medium or large catering, manufacturing or retail businesses. They are particularly relevant for those who have the responsibility to develop or monitor HACCP based food safety management procedures and systems.

Anyone working in a management or supervisory role within a food business is not only responsible but also accountable for food safety. It is therefore vital they are equipped with both the knowledge and confidence to do their job effectively.

The qualifications are available in three sector-specific courses (with Highfield Qualifications accreditation):

  • Level 3 Award in Supervising Food Safety in Catering
  • Level 3 Award in Food Safety Supervision for Manufacturing
  • Level 3 Award in Food Safety Supervision for Retail

Manufacturing and Retail Courses Available

Due to demand, most of our public courses are delivered as catering courses. If you need to undertake the Level 3 Course in Manufacturing or Retail please contact us for further details about attending the above public courses

Course Content:

  • Legislation
  • Supervisory management
  • Temperature control (chilling, cooking)
  • Cleaning
  • Contamination control
  • Applying and monitoring good hygiene practices
  • Implementing good food safety procedures
  • Contributing to the safety training of others

Course Duration:

Minimum 18 hours training time usually delivered over 3 days

Highfield Qualifications assessment is based on a multiple choice examination

CIEH assessment is based on a 40 question multiple choice examination

Instructor / Learner Ratio:

min: 1:6 max: 1:15

 

Awarding Body / Certification:

We are able to provide accredited courses by the CIEH or Highfield Qualifications

Course Requirements / Notes:

It is recommended that candidates have an understanding of food hygiene and safety and ideally hold a current level 2 qualification (within the last 3 years).
